The Chardonnay bottling from Paolo is the only dry white wine that he produces, originally he had wanted to make a white blend from traditional white varieties of the area along with the Chardonnay but felt that the Chardonnay on its own was the best wine. He first grafted more Chardonnay cuttings onto his existing traditional varieties; then he planted a new vineyard entirely to Chardonnay clones from Burgundy in 1989. The first bottling of this wine was in 1987, his Chardonnay bottling is decidedly more Burgundian in style than many other Chardonnay from Italy.
