The third in Paolo’s trio of international varietal bottlings. Cabernet Sauvignon is the grape he has the most acreage of outside of his traditional/native varieties, around 5 hectares are planted to Cabernet Sauvignon. Here he blends small dollops of Cabernet Franc and to a lesser extent Petite Verdot & Merlot into the wine.
